Our Sous Chef Noel Enright has put together these super tasty high carb and protein rich lunch recipes for carb loading Triathlon athletes.
Chicken with noodles & crunchy vegetables in a spicy broth
400g chicken fillet diced
4 nests of noodles
200g mange tout
Chicken stock(home made if you can)
1 piece of ginger (1”square) grated
4 tblsp light soy sauce
1 small red chilli finely sliced
25g fresh coriander shredded
1 lime juiced
First make the broth by using 400ml of the chicken stock. Heat it and add the ginger, soy sauce, chilli and lime juice. Cook your chicken in the remaining stock and cook your noodles in a pan of boiling salted water. Bring your broth up to the boil, add your mange tout, cooked chicken, noodles and coriander. Using a tongs to divide between 4 bowls and finish with a drizzle of sesame oil. Delicious..
Tuna melt on brown bread with red onion & chive
2 small tins tuna
4 slices wholemeal brown bread
4tblsp low fat mayonnaise
100g cheddar cheese grated
25g chopped fresh chives
1 small red onion sliced
Drain your tuna well, combine with the mayonnaise and the chopped chives. Spread out over the bread & top with your red onion and cheese. Place under a grill until the cheese is melted and beginning to brown. Enjoy & good luck.
